My neighbours were nice enough to bring us a bag of lemons from their tree, so I tried Lemon Bars from the recipe book Veganomicon. Its a great book, but in case you don’t have it, its reproduced with permission here.
These bars have a firm but jelly-like texture, and use the vegetarian “gelatine” agar.
Jars of agar powder can be found at Moore Wilsons in the Fresh department for $15.40 (its made in New Zealand, too!). Oh, and 3 Tbs of agar flakes = 3 tsp agar powder. I think these bars would be quite appropriate as party food.
